Merry Christmas to all and Happy New Year. I'm making my anual Ratatouille dish from my World's 100 Best Recipes book for our family gathering on Christmas eve. Ratatouille 3 green peppers, clean and cut into strips 3 small eggplants, pare, quarter lengthwise and slice. 3 zucchini, scrub and cut in to 1/2 inch slices 4 tomatoes 4 tablespoons olive oil 1 large clove garlic, crushed 1 large onion, sliced salt fresh ground pepper 1/2 bay leaf 3 spring of fresh parsley, chopped Grated fresh Parmesian cheese, use the good stuff! unsalted butter Lightly salt the eggplant and zuchini slices, arrange them in layers in a bowl and weight them down with a heavy plate or platter. Let stand for 30 minutes. Then dry slices on absorbent papper. Peel and corsely chop (or quarter) tomatoes. Heat some olive oil in a large skillet, add onion, garlic, salt and black pepper. Cook 4-5 minutes over high heat. Add sliced eggplant and zuchini and cook for 2 to 3 minutes longer adding more olive oil as needed. Add tomatoes and season to taste with salt and pepper: add bay leaf and parsley. Cover tightly and cook until vegetables are just tender (not mushy). Sprinkle generously with grated Parm cheese. Dot with unslated butter and place under broler heat a few minutes until top is lightly browned. |
